Japanese release is much superior and can easily be found translated to english online. Saturn version features extra content but is a disgraceful piece of shit. PSP version has the extra content of the ps1 japanese version but is so glitchy that the game might just freeze forever (you'll have to delete the save file) and has the stupidest border around the screen that you can't turn off.

360 and PS3 versions are perfectly fine re releases of the AMERICAN ps1 version. 360 one used to miss stuff but they patched it. Tho I gotta say, the exclusion of the song 'I am the wind' from the credits sequence was really fucking lame. Now it just plays a generic castle theme that is boring.

So in case you're still thinking about it, obviously don't play the PSP version, I have no clue why people would suggest that. PS1 has the iconic original english voice acting, while the PSP version has a new dub replacing it and an improved script which is decent, but nowhere near as funny. The PSP version has some other improvements though, such as almost instant loading, a new boss fight with Maria, Maria is playable, and you can choose between the Japanese dub or English dub.

There's a couple of new relatively minor bugs though (A positive one is that if you're quick enough you can backdash out of the room with death where he steals your stuff, and just keep your OP equipment. A negative one is that if you get hit while transforming, the game will full on crash.) The Saturn version is elusive and has extra content in no other versions, but other than that it's a porting disaster, with poor performance and other issues. I'd say, look up a youtube video with all of the cutscenes from the PS1 version and then play the PSP version, because the hilarious voice acting is pretty much the main thing that the PS1 version has over the PSP version.
